All went well. Everyone raved.
We heated the rice, corn, and beans in a row of crock pots. Used two ovens for the meat. The chicken was more frozen than the ribs so had a couple extra aluminum pans and separated them a little.
Even saved a pan of beans (you are right they were so good) for our Indio trip this week.

The food can make or spoil a party and your dishes were wonderful. Also another thing I really appreciated is that I didn't have to even think about the food once you arrived. There was so many other things pulling on me that I realized after you left what a dream it was to not have to be concerned at all about the food or serving at all. I only was involved with the other aspects of the party.
That was a big relief.

Hi Dan,

Well a day later the BBQ was still the talk of El Mirage Dry Lake. Everyone was still talking about how good everything was. So, I wanted you to know.

My wife was there. I don't know if I explained that. But she was bummed out by the wind and dust and heat and didn't want to leave the trailer, so she wasn't at the BBQ. By the time I got back around 9:30 pm she had already eaten something and was outside sitting by the fire and wrapped up because she was cold. So she didn't eat any of the care package you made for her. We had ribs for dinner when we got home Sunday evening. She especially likes the little short (in length) ribs because they are so meaty and smoky. She wanted to know how you smoked them. So I told her you did it with one piece of wood. She said that was impressive. I like your sauce, but she ate her ribs dry. Just savoring the flavor of the rib. My wife thinks that your ribs are the best she has ever had, and she is a big rib connoisseur. She has eaten ribs all over the country, while I tend to stick with the dishes I like, not that I don't like ribs, but give me a big ol' thick steak anytime. So, she thinks that of all the ribs she has eaten from the east coast to the west coast yours are the best. So that's a pretty good compliment coming from her. Just wanted you to know.

And your sauce, you might want to think about a side line just making and selling your sauce. I know it'll go over big.

Anyway, just wanted you to know that you were the talk of El Mirage, and we'll have to plan for another one next year somewhere.

Dear Dan, where to begin? It was excellent, awesome, fantastic, delicious, delightful, special, exciting, fantastic and well, we loved every minute of it!

Thank you so much for helping make my 50th birthday (yikes) so deliciously special. Every bite was perfect, and all our guests loved it. We only hope you had half as much fun as we did! I feel bad that it was a tough exit, but I was so impressed by your speedy entrance!

We shared with guests and made generous doggie bags, but also saved enough for a fantastic Sunday meal at my parents' house with our visiting German cousins. Yesterday we had enough left for sandwiches and my mom still has some morsels at home.

My favorite time eating was when you gave us tastings in the afternoon. Wow, that was exceptional.

We hope to have an opportunity in the future to have the pleasure of eating/playing with you and Barbara again. In the interim, again, many thanks for everything.

We have had several big get togethers at our house in Newhall  California. We used to cook our own food but realized as we got older that this was just too difficult.
We were introduced to Dan and the rest is history.
He shows up at our home with a professional looking trailer outfitted for a large event.
Food and tables set up in a pre-designated area of our home.
They used nothing of ours and served some of the most delicious barbeque we have ever had.
The extra side dishes were absolutely delicious.

I think one thing that was not said at my party was the following: "I/we cannot eat this or that"
I have heard that statement from so many family members that I want to scream.
All I got was compliments from everyone including those family guests that usually complain about something.

Thanks Dan. Perfect set up and delivery. I did the easy part. I just wrote the check.

Our Church Youth Rally was a Huge success. We had 94 people from all over Central and So Cal attend. The pulled pork sandwiches were Amazing! I had so much fun serving them knowing what raves they were going to receive. The men went home with a shaker full of your secret recipe and this Sunday I will present our fathers with a special BBQ basket including it.
 
A dear friend told me she had wanted your BBQ, a small order event and was turned away, she was surprised that we had it on the Menu! Her husband could not eat, unfortunately he is having dentures made and was toothless.. Can I freeze the butt that I have left over? I would love to give it to him when he has his new choppers..
 
The sauce was incredible, how long will it keep in my fridge? I will forward you the link to the photos when they are posted, Smiling faces are a testament to our efforts. Indeed working with you was a Blessing. Thank you for all your expert advice, and recommendations. Several visiting pastors asked me if we would host our Annual meeting in late August. My goodness was that ever a compliment.
 
It was a privilege coming to your home and getting a tour of your business. Our morning together set the tone for my day too. Again, thanks for everything.

The food was beyond my expectations and everyone was still raving about it at school today. The principal was being very diplomatic about comparing this year's event with last year's gourmet dinner with the principal. Her band, including her husband, were not so diplomatic. They all agreed the food this year was far better than last year's "chef" dinner, and they said that everyone left last year right after dinner, whereas this time, about 50 percent stayed till the last song. I had a very ingenious idea to spread the beans liberally on everything to get that amazing BBQ flavor - - it was as wonderful then as it was the first day.

  
I will pass this along to Marc and Laura because I know they were very interested in the rubs/sauces.   Please let me know how I go about getting the a small bottle of rub as well as BBQ sauce for myself and I'll pass the message on to Marc.
